Canning/Jarring Question

I know this is going to sound like a real dumb question to alot of you but I really don't know. When canning/jarring your own vegetables do they have to be flavoured/pickled? I'd assume not, but I've only ever had pickled. When I get into preserving my own food, as much as I do like pickled veggies I'd hope to be able to jar carrots that taste like carrots, corn that tastes like corn, zucchini that tastes like zucchini, etc. for cooking with. Someone please reassure me that this is possible.
