Local food specialties?

I've only had BBQ salmon and bbq oysters in Washington state.
We have a lot of Dungeness crab and you can still go for geoduck clams though abalone season has been closed for over a decade.
The local hot dog has cream cheese as does the Seattle roll, along with smoked salmon. This was the first place I ever had salmon pate. Nanaimo bars are from just north.

What do you have local that is great or you complain about? Our Mexican food, fried chicken, BBQ is pretty mediocre. Most hot dogs are skin less, even breakfast sausage mostly is at restaurants.
