Are rice and potato side dishes freeze dried or dehydrated?

I have a couple of failed attempts at making potato flakes. I did a thread or two here on it cant find them now if I do I will repost them.

1 was a total mess
2 used juicers and a bit of lemon to make a ground raw paste.
3 was lumpy, still discolored, and went everywhere while drying.

I dont remember who posted a responce, but they said part of factory process was steam and flash dry in floating air chamber.....

I still dehydrate my potatoes when I have abundance has been a while though. I still enjoy the off shelf when I want a quick serving of mash, add a bit of sourcream, smoother and adds a great flavor....

good luck though if a system pops up here I will give it another try.
