Let's talk Jerky

Might even do some turkey jerky.

It's jerky season. I'm making a batch right now in the wood stove:

Soaked this batch in Dales, liquid smoke, soy sauce and Worcestershire for 24 hours.

I usually put a few spices.
Pepper, McCormick seasoning, onion and garlic powder, sometimes brown sugar... But I was lazy and just wanted some. (Less than 3lbs)

But I plan on doing 50-100lbs before the end of winter. Beef and deer both.

Jerky is something I can do better on, so i'd like some recipes to try please.
