When you open it up you increase the air supply, the job of the carb is to match this with increased fuel, which yours is not doing.
Variety of reasons this could be happening. Many carbs have two sets of jets, one that only operates at high vacuum (idling) and one that kicks in at low vacuum (wide open) The high side could be plugged.
Or it could be a fuel supply problem in general, clogged lines, filters etc that lets through enough gas to meet the idle requirements but not the wide open ones.
Any east test is to squirt some carb cleaner into the intake (just a little) while trying to rev it up and see if it works. If it runs good with carb cleaner and dies without it then you know its a fuel supply issue.
Your carb may have an adjustment as well, many have one for low end, and one for high end.
Finding the owners manual and specifics of your type of carb etc is probably the place to start.
A good blast of carb cleaner couldn't hurt either. If its been sitting for a while its pretty common for gasoline to jell up or varnish and those carb jets are really small, less than a millimeter so it doesn't take much to block one.
