Bacon Grease

I married a city girl over 30 years ago. Today, she has progressed nicely into a gal that is at home in a 5 Diamond Restaurant as she is in a tent at 11k feet elevation in the back-country.

But.... there are still some things I am working on with her. (Of course, her list for me is probably 10x, as my list is for her!!! ha!)

Bacon Grease.... This has been a point of contention for decades. My mother had the traditional 'tin of grease' under her kitchen sink. My wife thought this was an atrocious practice. Old grease was right up there with dirty underwear.

This morning we cooked one of the best pans of "oven bacon" in many years. Thick sliced Hickory Smoked Wrights bacon can be found that is phenomenal, if you really pick through the packages. After breakfast she was about to pour out the grease and I yelled....."Stop!....I need you and I to spend 3 minutes on a Google search."

Alas....what did we find? Bacon grease stored in the Frig will actually last 5-6 months and if it is strained....maybe 9-12 months. (cause the bits increase the spoilage time)

She agreed to a Baggie of Bacon grease in our Frig. And....she is going to shop for the proper container to be a long term solution for us.

I am HAPPY.....HAPPY....HAPPY!!!!! I only took 30+ years!!!!
