Who has restored an old wood burning cook stove

I acquired an old wood burning cook stove. I'm guessing 1930's so it's not super old. The outside is in good shape and everything seems to be in working order. It was stored in a garage so moisture and mice had their way with it. The cook surface has rust and some minor pitting in some areas but it can all be saved.

My plan is to sand blast the surface, cook plates, and rectangular inserts for the surface. My question is how to finish them after sandblasting. I have considered two routes:

1) apply lard and season them in the oven similar to seasoning an iron skillet

2) paint everything with high temp grill paint

If anyone has restored one of these older wood cook stoves I am curious as to how you finished the surface and inserts?

Another question for the experts: My mother used to call the round cook plate inserts a "glees" or "gleas" or something like that. Anyone know what I'm talking about and what the correct word is?
