As a chef, I would say it should be stated differently. A not-so-sharp knife is more likely to cut you than a very sharp knife. A very sharp knife will glide through what it touches. When you lose that razor edge, more force is needed to do the job which can result in unexpected motion.
But, following good safety precautions help. Cut toward your buddy, not your body.
