Dehydrating bell peppers

I dry them in strips, (dry faster that way) stick them in the freezer so they don't partially rehydrate and mold, and then grind them with a morter and pestil when I'm going to use them.
(Easier than rehydrating and cutting, if you chop them up before drying they are too small, and it's easier than crushing them by hand.)
-can you tell I've done this a bit? Lol

I freeze a few undried, but for the soups, stews, beans and rice etc I use them in 95% of the time....

It's perfect.

They can be dehydrated inside.... no issues.
