How to preserve Ginger

Full disclosure, I have not done this myself but have heard of two ways.

1 Rinse well, pat dry and cut to your preferred size. Seal it in a vacuum bag and put the bag in your freezer.

2. Rinse well, pat dry and cut to your preferred size. Put it in a jar and cover with cheap vodka (40% ABV). Should keep well for several months.
