Post-SHTF Mortar/Cement

I'm looking for a variety of recipes in making homemade concrete. At my place in Texas, it would be very easy to make cement in a pinch for the concrete since the ingredients are more readily available. However, my place in the Ozarks that I'm starting on, is just loose soil (rock dust) and lots of rock. I have no source of clay, very little sand, etc. I've read that I can use limestone (not sure of the availability in my area) and shale (lots in my area), but don't have any practical experience.

Short of having yards and yards of material brought in and dumped on the back of the property, I'm wanting some other ideas. I'm considering the project challenge of a homemade concrete root cellar. I'm also wanting it for future projects.
