I am thinking about stripping the coating of my SCHF52M

Hello all,

As the title says. The coating is coming off at a rapid rate, it was ugly, but now it is horrid looking. So I figure I might as well take it off. If I were to do this, what would be the best paint stripper to get? What should I do to protect the metal under the handle scales from rust? (worried it might get wet and rust without me knowing) Any advice on the process and other things to do to protect it would be great. Thanks.
