"Finding" Votes

In Florida, Georgia, Arizona, and other states, Democrats are working overtime to "find" enough votes to overcome their electoral defeats. They are targeting at least two governors, two senators, and several other seats.

So my question is: Aren't votes meant to be easy to count? I mean, you show up, cast your ballot, and it gets tallied. I understand absentee ballots for people who, like the military aren't able to pe present on election day, but all of these other arrangements, from early voting to provisional ballots to no-ID voting, are nothing more than bald-faced invitations for fraud. In some districts, especially Florida, where the Governor and Senator are on the line, they are doing it in private, and not allowing concerned citizens or Republican poll watchers scrutinize their actions.

How the hell hard is it to run an honest election? And why is everyone in these districts and states sitting idle while they just keep counting and recounting, "finding" ballots until the Democrat wins?
