If you go the plywood route, strip the drywall from the room and attach the plywood directly to the studs with screws. I wouldn't think you'd want the drywall sandwiched between the plywood and studs. My house, which was built in the 50s, appears to be some kind of kit and has walls and ceiling of 3/8 plywood. It's great for attaching anything to the walls.
