Trying to get enough ripe tomatoes this year to make about 10 quarts of salsa, problem I'm having is I'll get 1 pepper a week and 4 tomatoes a week I know I can dice up the peppers onions and cilantro then just freeze them but can I dice up the tomatoes and freeze them until I get enough to make the salsa?
I know I can water bath can them until it's time but who wants to can 4-5 tomatoes a week. If I freeze them will they thaw out and still be usable for salsa. My salsa recipe calls for cooking/boiling the batch so the toms will get soft anyways.
