If you're a minimalist then probably the .308 as it's less calibers to stock.
However, there's also advantages to having diverse calibers. That way if you run out of 1 particular caliber, you have something different to shoot if you have multiple calibers and are trying to source ammo. 2 gives you variety.
If I were in your shoes, just wanting 1 dedicated long rifle, I'd probably go with the .270. Or 7mm Remington, .300 Win Mag, or whatever happens to be the best used deal out there, truthfully.
However I have made my decisions and I have lots of calibers in lots of platforms.
For hunting or long range tactical bolt rifles, I have multiples of .300 win mag, .3006, 7mm, .270, .308, .303 Brit, 6.5 Swede, 7.7 Jap, 8mm Mauser... plenty to choose from...
Oh, and yes, the SKS is a .30 caliber and definitely a deer capable rifle.
