What's the best food to store in hot climates?

I live in a hot desert climate myself. Dry foods tend to last well. Rice, pearled barley, pasta, beans, dried fruits and veggies, etc. I find that powdered milk lasts well here too. Much longer than I have seen suggested. Powdered eggs don't do so well in the heat.

Canned foods last fairly well too if they aren't high acid like fruits, or milk based like condensed or evaporated milk. They just need to be in a dry area. Moisture will cause them to rust and form pinholes that allow bacteria in.

Meats and fish are often dried too. They last very well, especially in dry climates. You can do this yourself. Or perhaps buy it locally, since it's fairly common in many parts of the Middle East.

For the longest storage of dry foods, packaging in mylar bags with oxygen absorber packets are the best method. I don't know if these are available in your part of the world or not. If they are, this section of the site is full of a lot of useful information.

People in the Middle East have been drying and storing foods for ages. Your best sources of information might be right around you by looking in the markets and talking to older folks in the region.
