incubating chicken eggs

So,this is my first experience with chickens.
Inherited 2 chicks this spring,was able to keep them alive and raised them thanks to some of ya'll on here.
Turned out to be a rooster and hen.She has been laying 1 a day for a month now,which is plenty for me.
I've seen the rooster mounting her,so I guess they are fertile,but she won't sit on the egg after its laid.

Just for the experince,I'm thinking of trying to hatch some of the eggs.I can google the hows and set-ups,but want to see what advice ya'll have first.

I don't know all the questions to ask,but I have 1.

Can I just keep adding 1 egg eveyday to the set-up?
