Then I'd rebottle it, put all the bottles in the refrigerator, and either get a gas flusher and flush the bottles or get a cheap manual vacuum pump and vacuum the bottles. The vacuum pump would be more generally useful in future.

Refrigerated and with most of the O2 out of the dead space, you should be able to use it up before it goes off. If you don't want to invest in any equipment, find yourself narrow-mouth glass bottles and fill them right to the tippy-top-top before capping tightly and placing in the refrigerator. Shelf life depends a lot on what you've got there--if it's genuine EVOO with low acidity, it's going to last a lot better than if it's one of the many adulterated/lower quality oils masquerading under an EVOO label. If you have a brand I recognize, I might be able to tell you the odds on what you've got.
