A few years ago some of the producers around here did syrup in two batches, very early and more seasonal. I wonder if it harms the trees. I tried to research it but did not find a definitive answer. I will say I went out this AM, scoping out the maples in my walk about. I bet the sap is running here in northern NY, too. I look forward to syrup season. Lots of work but with a nice reward.
