Ive been using reel mower bed knives for quite awhile now to make knives and tomahawks. They have a bevel on one side and a shallow groove on the other side along with counter sunk screw hole all along the opposite edge. So i generally cut them into lengths and forge weld them into billets. Lately ive been using stock removal to cut off the screw holes and bevels. The bed knives are about 3/16" thick so there is a lot of grinding to get a standard kitchen knife thickness. Ive been thinkin of doing a hollow grind to thin them out a bit along the edge and leaving the spine thick. I havent been able to find anything with hollow ground kitchen knives, the majority seem to be just thin blades. The meat knives i dont see an issue its the wider chef knives im wondering if anybody thinks this would be a problem with function.
