Victorian Christmas Drink - Smoking Bishop

For the last few years, I have made at Christmas time a drink which was popular in Victorian England, called Smoking Bishop.

The version I make is pretty simple but it is always popular:

2 bottles Burgundy Wine
1 bottle Port Wine
1/4 pound Sugar
5 Oranges
1 Grapefruit
Whole Cloves

1) Wash the fruit, place on a sheet pan, and bake in the oven until brown-ish. I do 350 degrees for about an hour.

2) After the fruit has cooled, prick with whole cloves. About 6 cloves per fruit.

3) Pour the Burgundy Wine (only) into a non-reactive container. I use a ceramic crock pot. Mix in the sugar until dissolved. Place the fruit into the wine, cover, and let sit overnight.

4) Remove the fruit, squeeze and strain, then pour the juice back into the container.

5) When your intended serving time is approaching, pour in the Port wine and turn on the crock pot. You want the drink to be warm, but not scalding hot. And definitely don't let it come to a boil.

6) Ladle out and serve warm!


Don't spend a lot of money on the wine... This is what I use.


Wash the fruit and bake in the oven.


When the fruit looks like this, take it out of the oven.


Prick the fruit with whole cloves, place in the Burgundy Wine, and soak overnight.


Remove the fruit, squeeze and strain, and pour the juice back into the wine.
