Making tortillas

Not sure what makes good ones but there are definitely differences. I once saw some old women patting out corn tortillas but don't remember if they were special, it was a long time ago. Some tortilliarias are great, others not but none local anyway. I do have a cast iron press.
Freshness? Using fresh masa? What brand of dry masa do you like?
Flour tortillas are also good. The raw pressed dough from tortillaland is excellent but you need to use it up right away and its a bit spendy. If you have gas, heating commercial flour tortillas right on the flame gives a nice smokey charred taste.
Any advise or recipes?
You can make sopapillas by deep frying raw flour tortillas. Though i was just looking at this recipe.
