you use cable snares, set on their trails, held 3" above the ground on little forked sticks. Hook them to a drag log, about 8" OD and 10 ft long. A blind man can follow that trail. The critter will exhaust itself in a mile or less and you can finish it off with a slingbow, maybe even just a spear, if you've got a really great blade, like the Cold Steel spear offers.

You also will be able to brain it with a quiet .22lr, or down it with a bola and then finish it with an axe. Much more easily, of course, you can apply this to cattle. In fact, at night, vs cattle you can skip the snaring and just use a bola. or the slingbow.
