Braise a good resource. They are a farm to table restaurant and a culinary school. I did a hog butchering class there recently which was super fun and informative. We watched a butchering demo, then we all walked through a second round of butchering where he demoed each cut again and waited for us to try it ourselves on our own half pig. There were also mocktails, pork roll appetizers, and pork tacos...yum.
They also offer sausage making, charcuterie, cheese making, bread making, seasonal cooking, pasta making, etc classes that local folks may find to be useful self-sufficiency skills to pickup.
