2 free cases of Fuji apples

Yes. dehydrate some. Can some. Eat some fresh. Make muffins. Make pies. How 'bout apple cream cheese empanadas! They do not require pressure canning, water bath canning will do just fine especially if your canning recipe asks for a bit of lemon juice.

Make apple pie filling, put plastic wrap in a pie pan then fill with prepared filling, freeze it, remove frozen-not-cooked but pie-shaped filling from pan, wrap and put in the freezer. When ready for pie, just make crust shell and slip frozen filling in, let thaw a bit, then bake. (It doesn't need complete thawing.)
