Maybe it will help to think about Ohms Law. Say you want to power a 100w light. Since volts times amps equals watts, v x a = W, A 12 volt system would require 8 amps. A 24 volt system would require 4 amps.

You can run your 12 volt batteries in series to get to 24 volts.
If it is all going through an inverter it probably doesn't reallly matter much.
