Problem is it absorbs liquid water. Most things that do that, do poorly at absorbing humidity. Silical gel is a classic example. There are crystals that do well at holding humidity, but crack and break when exposed to liquid, and others that swell and absorb liquid, but don't do much for humidity such as kitty litter. I guess it depends on how it's made.
