Commercial bacon of today isn’t like the old dry cured smoked bacon. Even so, the Daily’s pieces and ends I buy will last over 2 weeks in the fridge in a tight container. But most types of bacon aren’t actually smoked, it’s all flavorings, and salt has been replaced with other chemicals, so most bacon doesn’t last that long anymore.

But the stuff that was salted to death, and smoked to death, would last for months. Sailing ships had salted...everything, really. They were often 2-3 months between ports. They kept it in barrels, below decks, so it wasn’t cooled, it was all about the salt. Pork, beef, fish...it all worked.

But you had to soak or boil the salt out to make it edible.
