Food for Car Kit

I'm finally assembling a long overdue car kit for each of our cars. Putting as much as I can in a 5 gallon bucket. Bottom is filled with small bottles of water then topping it off with a small first aid kit, knife, and food. My question specifically is what foods should I include considering the kit will go through summer in the car? What foods are most heat stable? I was thinking about some Mayday bars as they are designed for use in lifeboats which commonly see high temps. Or should I remove the food for summer use and just include it in winter?
For shelter, I scored a Wiggys bag ($10) for the wife, and a MSS Intermediate bag ($5) for myself. Being that these were so cheap, they will reside full time in the cars as I have different bags for our BOBs.
