Baofeng UV-5R Help for Newbie

So the wife and I went to a survival expo a couple of weekend's ago and she just had to have the Baofeng UV-5R radios. Her concern is communication if we get separated and monitoring what is going on outside our little sphere.

But I have no clue how to program one or where to start on scanning frequencies.

Any help out there.
