Greetings from NE Florida- but soon to be East TN (any advice?)

I really have no praises to sing about Florida to be honest....So we are hoping to be leaving my 1 acre of property in FL and searching for 3+ AC in areas surrounding either Knoxville or Chattanooga. We are traveling this weekend to visit both locations over 4 days. I don’t know too much about the cities other than what I’ve read online but I do know my wife would prefer to be 20-30 nearby for job interests.

About us, we are in our early 30’s, enjoy the outdoors, camping, etc. We have kids and are looking for areas that offer Catholic schools and a Christian sense of conservatism and/or libertarian-ism. I am thinking we will rent initially and buy land and build a house. Any considerations an outsider like me might need to know about?

What are the negatives of living in Knox or Hamilton County? Should I try to avoid them in my search?
