Anybody know how cream of wheat is manufactured?

Cream of wheat is made from durum semolina. That's what they make pasta from. It's really hard wheat that's milled down to the center part. Cracked fine for farina, or ground to flour to make pasta.

I'm not sure if it's cooked then dried, or just ground dry and sold.
