Pantry dinners

Once a week or so, I try to prepare a new pantry dinner - a dish that comes entirely from what we have on hand (mostly long term storage foods, although I will occasionally throw in root vegetables if I have them on hand). Soups, in particular, are a favorite in our home. Tonight, I made chicken enchilada soup (canned chicken, spices, canned tomato sauce, pasta shells, rice). In nights past, chicken wild rice soup, beef potato soup, chicken tortilla soup, and more. The easiest way to develop your own recipe, I've found, is to model them after the bag soup mixes (I've compared their version to my version, and they are very close).

Hot dishes and dinner salads based on pantry ingredients include pasta primavera, bean tostadas, italian pasta salad, bean salad, pesto shells and of course spaghetti.
