One youtube video said not to use overripe bananas, that the best ones are the just barely ripe.
Another video () does a taste test and does overripe bananas and a ripe bananas, and says the overripe turned out much better - was sticky, but was like a soft toffee, whereas the ripe banana was stiff and like cardboard.
She also did not use lemon juice on the overripe, but did on the ripe. Says the only difference the lemon juice makes is for color.
I'd be interested in what your experience is with dehydrating bananas.
