parsnips and other things for winter we need NOW!

I've never had a winter garden (this was my first winter here... zone 6)

And I was doing some planning/reading and see that I'd better get my parsnips in the ground for winter QUICK!!!

my issue with vegies is that while I like many of them Raw (my classic example is the turnip) I hate them cooked. (Few exceptions like peas and corn)

So, I'm going to try to lean towards things like carrots, parsnips, kale, but will also grow and then experiment with things like leeks.
(Don't like squash, but I'll try some dried, chips etc.)

-most of its based on me being a "texture>taste" type person.
Mushy veggies don't appeal.

I may try some of this winter mellon I'm reading about, and know that there's some watermellon that store for up to 4 months...

Feel free to be general, but in this thread I'm most interested in things like the parsnips I need to plant/plan for NOW or soon...
