Compression sack question

I'm looking to buy a couple of Com. Sacks, one for my cooking gear and the other for my clothes. What size would I need? I'm thinking that a medium will give me plenty of room.
How do you all organize your pack with the compression sacks?
Also, I'm thinking of going with Sea to Summit. Is that a good sack?
