Question on dehydrated foods

I bought a dehydratER and going start using it for long term food storage. I plan on storing the foods in mason jars. Is there other ways to store the foods? I can put them in mylar bags with a o2 obsorber but wouldn't that be overkill?
How do you store your dehydrated foods?
