Too many eggs

What can I do with them?

All our neighbors have chickens, so they don't need eggs, and we sell very few during the winter when there is no farmers market. We don't want to have less chickens, because we could use more eggs in summer when we sell all of them pretty much.
You can only eat so many, and they don't freeze well ( tried that and they are a really weird texture when you defrost them)
