Peeling Veggies

I always peeled cucumbers and squad before I used them. Today, I was peeling a cucumber and started to wonder if it matters. Who peels skin and do any of you don't? Just asking...

I marinated the cucumber in a wine vinegar with onions. But I'm thinking I'll do a kind of bake with the squash. Don't know how that will turn out.
