M 1 carbine

Just got a M1 carbine reciever and found a smith to barrel it. I am going to build a M1 carbine from new old stock except the barrel which will be a match grade barrel. I have two questions that I hope I can get some reasoned opinions on:
1) Should I go with .30 carbine caliber or go with 7.62 x25 Tok (which I have many thousands of rounds of)?
2) Should I use a regular military stock or the folding paratrooper stock? I like to look and feel of the regular stock but want to minimize weight and limit overall length for this truck gun.

So let me have your opinions please.
Already got AR, sks, 308 and a multitude of other calibers and platforms so please no get an AR or AK or whatever.
