Question about days to maturity for beans

The shelling stage is where the beans have sized up inside the pod but are still soft enough to shell out and eat. The stage beyond that is dry, at which point the beans inside the pod have matured and are hard. That's usually when the pod is dry too and if you shake the pod, you can hear the beans rattling inside them.

If it's "shellies" that you want, just don't let them go too long because the longer they grow the more starchy and less tender they get.
