How to convert '91 Suburban into livable van?

Hey guys, I have a nice 1991 GMC Suburban that I'd like to convert into something livable, including hot water, sink, food prep area, stove, food storage, bed and any other necessities.

First off, am I choosing the correct vehicle? I bought this vehicle cheap, $1500, replaced the trans for $1800. Unknown engine mileage, probably over 200k, but it runs great and compression on all cylinders is excellent. It looks great inside and out, also includes an 'anti-sway' tow hitch, which is great because my goal is to eventually tow a little home behind it haha! The 350 V8 in it is strong as hell and you can find parts anywhere.

I really think this is a great choice but I'd love to what anyone else's suggestions might be, I may open to trading for something of a similar value if it's a better choice.

As far as mods, I was thinking a black hot water tank on the roof for hot showers and sink, a fold down table from the side, not sure yet how to do the sink? , and perhaps cabinets inside??
