Canning veg soup in hot water bath for 2 week shelf life?

Definitely not. I would purchase canned food from the store if you really need shelf-stable stuff for your trip.

You'll probably see a few people here claim that they water bathed soup and no one died, but that does not make it safe; it makes them lucky. Very, very, very lucky.
