Bullet Proof Material Testing

So here's the deal, I'm making a few samples of composite materials with the intention of testing their resistance capabilities. My plan is to stab them with a knife and progress up to shooting them with a 40 cal (and maybe rifle rounds), this Saturday at my in-laws. There's a few folks who've tested a variety of materials to create various types of 'armor' on the internet for a very low cost, and since I had some time to blow, so I thought I'd make my own for fun. Here's my three samples:

1) 15 layers woven roving fiberglass layup with cured resin (9" x 9")
2) 5 layers fiberglass (front), ceramic tile plate, 5 fiberglass layers (rear)
3) ???

Since I have a new YouTube channel, I figured I'd film the shots and give the viewers the best experience possible. To add to the effect, I'm going to purchase a Mannequin and strap a plate carrier to his chest with the 'armor'.

Do you guys have any suggestions for the third sample option? I'll have some fiberglass left over fyi
