Food storage for those on a more limited diet (Paleo, Vegan, etc.)?

Hi, I'm not going to argue that some "bad food" is better than no food. That's obvious.

However, for some people can develop medical issues if not on a specific diet. For example, I have some autoimmune conditions and if I am not following a strict paleo diet, I personally develop some health issues (chest pains, digestion problems, muscle spasms and cramping). Because these health issues could have devastating results in a time when medical & pharmaceutical resources are not available, I really need to take this into consideration with food storage (not to mention that in order to properly rotate food items, I will have to eat them semi-regularly during the "normal" rule-of-law times we are in now).

Are any of you all in a similar situation where you have to restrict your diet? How have you overcome this with your food storage?
